Smoked Sausage Mac & Cheese with Broccoli

  • 1 package Smoked Sausage
  • 1 tablespoon vegetable oil
  • 1/2 cup chopped small onion
  • 2 cups vegetable or chicken stock
  • 2 cups cavatappi #87 pasta
  • 3/4 cup cream cheese, cubed 
  • 1/2 cup broccoli florets
  • 1/2 cup heavy cream
  • 1 cup shredded sharp white cheddar
  • Salt, pepper, chili crisp to taste
  1. Cut sausage into ½” diagonal slices. Heat the oil in a large 10in skillet and pan-fry sausage slices until browned, 5-6 minutes. Remove and set aside.
  2. Add the onions and stir until the onions soften, 2 minutes.
  3. Stir in the stock and cream cheese, continue stirring until cream cheese dissolves. Bring to a boil.
  4. Add the pasta. Cover the pan and cook for 5 minutes.
  5. Stir pasta, add cooked sausage back in, broccoli, heavy cream and cheddar cheese and cook for another 6-7 minutes until the pasta and broccoli are tender.
  6. Season with salt and pepper to taste. Top with extra cheese and chili crisp, if desired.
